◎Our dishes are gluten-free , MSG-free and vegan dishes. We use koji seasoning, traditional natural seasoning in Japan.
◎Thorough our experience, you can learn zen philosophy and how to lead wellness lifestyle both physically and mentally.
◎You can enjoy the experience in the historical Samurai house built 300 years ago.

Very easy and faster and good for environment.
(We have to store our handmade miso more than three months for fermentation.)

miso soup, miso spread, soy pulp mochi(it tastes like rice cake. )
Soy pulp is leftover of making tofu.
⑤Finished!! You can bring back your handmade miso home.
(Please store it for more than three months in the room temperature.)

6〜15 years old guests are only miso tasting.
But if they want to make it by themselves, it costs more2500yen.
(Only miso tasting. 1000yen)

Other things to note
Miso is made of soy beans.
But, the people who is allagic to soy beans can also eat it because soybean allergic reduce by fermentation.
We prepare two kinds of miso tasting, miso soup, soy pulp mochi and miso spread.If you are allegic to soybean, you cannot try soy pulp mochi and miso spread.

Miso is Japanese traditional fermented seasoning.
Miso is rich in nutrients and very useful ingredient in the kitchen.
Traditionally, miso is made from whole soybeans but we make it using soy pulp so you can make it easier and quicker!!
Though soy pulp is healthy food and rich in nutrients , it is disposed of as industrial waste!!
This is an effective use.

We enjoy this class in Samurai house.
The samurai house is very old residence built about 300 years ago!!
The samurai had lived here and protect the famous temple called "West-Hongwanji"(Nishi-Hongwanji).
10 minutes walk from Kyoto Station.
One street west from Nishinotoin Streetand two street east from Horikawa Street.It is on Higashi Nakasuji Street. About 50M north from Shichijo Street.

Making Miso with Naomi was great fun! Naomi was really nice, explained everything in detail and gave us many tips. And the miso paste smelled and felt so good! Moerover, Naomi let us explore the fantastic old house and take many picture. We learned a lot about japanese culture.

I had such a wonderful time learning to make Miso. Naomi teaches you lots of different ways to use the miso and even kindly gifted me ingredients to make quicker things while I wait for my main miso to mature. She has great English, cares about people and knows exactly what she's doing. The old samurai house is so cool too.

Naomi is very nice answering our questions during the process. The Samurai House, with beautiful decoration, is a perfect place to experience Japanese culture. We had a great time, even our kids enjoying it.

What a different and wonderful way to spend an hour. Naomi was charming, very knowledgeable, and a pleasure to spend time with. Interesting use of soy pulp and how to use it making miso.
