You will be cooking with one of the best international chefs. I will show you how to prepare the perfect pasta—no machines, just your hands, the freshest local ingredients, and your fantasy.

You’ll be part of a day workshop and then join us in tasting what you have just cooked.
I will teach you how to make many types of homemade pasta in a pasta laboratory of the prestigious restaurant "Oste al Falcone", which is located in the heart of Rome, Piazza dei Caprettari 56, behind the Pantheon.

We will start our workshop making handmade pasta with different kind of flour. We will make thin sheets dough, sometimes colored in green with spinach, red with tomato, or black with squid ink. You will be guided into a careful explanation of safe food cutting procedures, realization of different types of ravioli, both in shape and filling; fettuccine; tonnarelli, and tagliolini. All dressed with local Roman sauces such as Carbonara, Cacio e Pepe, Amatriciana or Gricia sauce.
We will cook all pasta and prepare all the sauces made during the class, accompanied by good Italian wine.
Moreover, you will be awarded of a class participation diploma.

Other things to note
The location is easily accessible by walking or public transportation, being located a few steps away from the Pantheon, exactly in front of the most famous cafe S. Eustachio.
With public transportation the best way to get to Oste al Falcone is to get off the bus in Largo Argentina.

I have been cooking professionally for more than 20 years, and I will be glad to teach you what I have learned from my experience as an international chef.
I have been the chef owner of "Da Alessandro" an Italian restaurant in New York, USA for more than 10 years.
I have also taught pasta making and cooking classes for chefs in New York at the Four Seasons, Tavern on the Green, Harvard Club, and Serafina Group "Signor Ravioli" restaurants.
I also managed a pasta factory in Hoboken, New Jersey.
Now I live in Rome, my home town, specializing in teaching Italian pasta making at all levels.

My friend and I had so much fun making pasta with Alessandro. We learned to make two sauces of our choosing, ravioli and fettuccine all by hand. I am excited to recreate what I learned at home! Alessandro made the process easy and fun. It was the perfect way to spend an afternoon while visiting in Rome!

Experience was great. Would highly recommend. Takes some practice to get on your own but once I do I definitely won’t be buying store pasta again.

Excellent experience! Alessandro is a pasta expert and has been in the international restaurant business for years. Truly a treat learning how to make pasta from him. He is very nice and makes sure everyone knows how to make good pasta before leaving! We also made ravioli and two different sauces. If you have time, Alessandro is well worth the trip.

We had a great time learning how to cook pasta with Alessandro. Also we got to know more about his life and could appreciate the simple yet delicious pasta. Due to the former place beeing closed for the moment Alessandro offered to pick us up and bring us to his studio by himself. He also showed us some of his favourite spots on the way. We were very happy to have the experience with Alessandro as our guide.

Alessandro is very friendly, outgoing and perfect host/teacher. He picked us up at our apartment to take to his home for the class and brought us back afterwards. What a fun time of learning and hands on pasta making that we ate at the end with whatever kind of sauce we suggested he make. We left with several days worth of pasta, ravioli and herbs for future lunches. Highly recommend and great way to spend a few hours in the afternoon.
