1. You'll be introduced to the site, Halleck Vineyard, and a bit about its history in Sonoma County. You will be introduced by the vintner to the land and the vines. 2. We will sit down and learn how to taste: why do we smell to begin? what does our tongue taste? what is the reason and benefit in pairing wine with food? 3. We will go through 7-8 wines along with 5-6 food pairings, all from the neighborhood and explore how different they taste and the nuances of each. And we'll taste different pairings and how they each bring something to the experience. 4. We'll learn about wine in human history, 8000 years in the making. 5. We talk about building community through wine, how we convert wine into good for our world. 6. You'll meet interesting people and how much we share in common. 7. This tasting educational, fun, and intimate: perfect for groups and team-building. Other things to note Come with curiosity and interest in wine, prepared to enjoy yourself. The Perfect Wine Blending Experience
Learn the art and science of winemaking. We’ll start with a stroll through an idyllic vineyard for a firsthand look at the vines. As we walk the rows, I’ll share why this area is the perfect place to grow Burgundy grapes, including pinot noir and chardonnay. Then, we’ll blend wines that have been aged in separate barrels to make a classic red blend of Cabernet Sauvignon, Merlot, Malbec Petit Verdot and/or Cabernet Franc. Each person will leave with a bottle of your creation! Other things to note Tom Meadowcroft, Michael, or Elaine, will be your host. Bring comfortable shoes, a hat, sunscreen, and a camera. Make friends at a farm animal sanctuary
Join us for a day at the sanctuary and meet a variety of rescued farm animals. We'll share their stories of resilience and healing and also talk about the industries they come from. You'll love meeting our animal ambassadors and may be surprised at what you learn since we so rarely see the animals in our food system. The Experience will last approximately 1.5 to 2 hours. Please be mindful that, as a sanctuary for rescued animals, our priority is the physical and emotional wellbeing of the animals who call Charlie's Acres home. Our animal residents are completely free and always have a choice whether or not they interact with visitors. They will reside at the sanctuary for the rest of their lives, where we'll have the honor of taking care of them. Bake Bread, Create Cheese, Flip Omelets
In this super-charged BRUNCH class, I’ll teach you how to make an easy homemade sourdough bread from scratch without the hassle of a sourdough starter. You will enjoy this bread several ways for brunch alongside other dishes. Besides the bread, we’ll also make fresh ricotta cheese, tartines, and perfect French omelets—made with Petaluma’s famous eggs. The experience will be hands-on and you will learn some valuable cooking skills and tips in this robust class—and at the end of the class you’ll get to take home the loaf of bread you baked, to enjoy later as a delicious souvenir. This is a great class for beginners, or intermediate bakers, as well as for people who want to learn many general cooking tips, and who want to enjoy a delicious 4-course brunch with a complimentary glass of California bubbly. This is not a class for people who want to make sourdough bread with a starter. This IS an experience for someone who is hungry for both knowledge and great food. The Taste of Sonoma Bike Tour
We will bike on our local country roads while enjoying stops in vineyards, walking through 160 year old wine caves and even, during the harvest season, we enjoy tasting the grapes and testing the sugar levels. All our experiences are geared towards each small group's needs and wants. We will enjoy a private lunch at one of the wineries, a behind the scenes cheese tasting (exclusively offered to our guests every day but Sundays and Mondays) and more. The wineries we pick are diverse and the route is designed to show our guests what Sonoma has to offer. Other things to note Our locally guided experience includes the lunch, waters, and the behind the scenes cheese tasting and tour but does NOT include the tasting fees which typically run between $30-40 average per winery.
Wine Country Sushi Experience
I invite you to a winery lounge nestled in the charming wine region of Kenwood. Only 20 min drive from downtown Sonoma or a 15 min drive from Santa Rosa. We specially chose this location for the wines and food pairing. Séamus tasting lounge is where we will teach our class in the winter months. We will demonstrate some of the dishes I have perfected on my restaurant's menu. I will demo step by step how to create unique sushi with fresh high quality tuna, salmon , Hamachi and other species of fish. We will pair each bite with wine to complement the meal's flavors. Along the way, I will teach about different types of Tuna species and why Blue-fin, Big-eye and yellowfin tuna is distinctively different from all other fish on the market. I will include recipes and methods for you to continue practicing yourself at home. It's how I was able to learn and I hope to share my love with the rest of the world. At the very edge of California Wine Country we explore the Russian River where it pours into the Pacific Ocean during a 2.5-3 hour guided kayak tour. Your guide will meet you at our launch point with tandem sit-on-top kayaks, lifejackets, and paddles before a small safety talk and overview of the day's paddle. We kayak the peaceful Jenner Estuary and keep our eyes open for resident harbor seals, cormorants, pelicans, and a variety of other wildlife as your local guide gives a unique perspective of "Wine Country" that 90% of visitors never experience. History, wildlife, and local culture are tied together to give guests a deeper and richer understanding of this amazing corner of the world. Love on Baby Farm Animals
Meet the animals at La Candelaria Ranch in Petaluma! I'd like to share them with people interested in learning about them, interacting with them and showing them love. The 1-hour interactive tour begins with visiting the goats, horses, cows, llamas, and chickens. We'll be walking. You'll also get to meet Jack the mini donkey. I will show you around for 1 hour then you are free to explore for another hour or longer if you'd like. Wear mud boots during the winter. Kids and "adult kids" are welcome. Walking around the ranch, you can connect with a tiny jersey calf named Tati, newborn goats, baby chicks, a mini donkey, and Scottish highland calves. You can see and photograph full size horses, cows, llamas, alpacas, peacocks, and emus. This experience is a great outdoor venue for family get-togethers, kids birthday parties, adult celebrations, off-sites, anniversaries or just to get out of the city for the day. Because we are outdoors and there is a lot of space, we believe this is the perfect venue for all with respect to our ever-changing COVID concerns. Foraging and picnic at flower farm
Guests are welcomed to explore our magical rose farm and forage for fresh cut flowers while enjoying the company of our many free range farm animals. You are also welcome to bring a picnic and blanket during your stay. Your host will greet you upon arrival for a brief orientation of the grounds. After your orientation you will be invited to forage on your own and cut fresh flowers to take home. As you roam our fields and gardens you are sure to meet our lovely farm animals and other wild guests. We have chickens, cotton patch geese, dogs, cats and goats. During your visit you are also welcome to bring your own picnic and blanket. Please do not feed the animals and follow the ‘pack it in, pack it out’ rule of thumb. Guests will leave with a bucket full of flowers and full hearts. We will provide you with a bucket you can take home. Cutting shears and garden gloves are available to borrow. Other things to note Wear appropriate attire: clothes toed shoes, a hat, sunscreen, layers in case it’s hot or chilly. If you are bringing your own garden gloves, leather is best. The Epicurean Connection is offering private hands on cheesemaking class with award winning Cheesemaker/Chef Sheana Davis & Wine Educator/Cheesemaker Ben Sessions. Class included hands on cheesemaking class, a cheese cloth, cheese ladle, cheese recipe card and cheese trail map, artisan cheese tasting and complimentary Rose. The guests will make a 2-3# Creme de Ricotta wheel of cheese and or flavor the Creme de Ricotta from our Spice Bar. Please bring a cooler to take-home your cheeses. Our guests will be given directions to drive to Le Vin Winery & Vineyards. There you will be greeted and taken to the west corral. With an introduction to our Le Vin and Seawolf Wines and Le Vin olive oil. Seated for an incredible outdoor wine tasting, olive oil tasting. You will experience a taste of our wines, a selection of 5 wines throughout the 2 hour visit. The live music begins on the Corral Stage overlooking the most expansive views of mountain ranges and valleys below. We will visit two of the best tasting rooms in this area, where we will taste through a flight of wines, practice our sensory analysis, and discuss the link between the liquid in our glasses and the soil in which the grapes grow.
